General Notes

As the name suggests, Very Fresh Noodles is a Chinese counter restaurant in Chelsea Market serving frehs hand-pulled noodles. I ordered the Tingly & Spicy Cumin Lamb (Dry), and it was quite possibly one of the best noodle dishes I've ever eaten. Perfect texture on the noodles, generous portion of lamb, and the most intensely flavorful chili oil combine to create an incredibly savory, well-balanced, and enjoyable dish. I'd absolutely recommend giving this place a try if you decide to visit Chelsea Market.


Positives

> I think an underappreciated aspect of what makes the Dry Tingly & Spicy Cumin Lamb so good is the consistency of the chili oil / sauce at the bottom - it's actually quite thick and not particularly watery, which helps it adhere to the noodles. That's part of the reason why I almost always order this dish as dry noodles if I can.


Negatives

> Only counter seating is available, and the lines can get pretty long (particularly on weekends and holidays). Expect to wait for a while in line and looking for a seat if you come here during peak hours.


Dishes Tasted

  • ★★★★ Tingly & Spicy Cumin Lamb (Dry) -- Incredibly flavorful and an amazing texture. A generous portion of relatively tender lamb, "flavored with a heap of cumin" just the way I like it. The noodles are thick and have a nice chewiness. The highlight of the dish, however, is in the chili oil - intensely savory, ideal level of spiciness/tingliness, perfect consistency, and stays on the noodles. The scallions and herbs were nice too. My only complaint is the random pickled vegetables, which were way too acidic.
