General Notes

My first real well-known ramen shop experience in New York, and without a question the best ramen that I've had to date. Everything about the ramen is cooked in a way that aligns with my preferences - rich, relatively salty, thick noodles, perfect toppings, etc. Apparently, this restaurant is also Michelin guide recommended. I would absolutely recommend giving this place a try, and I look forward to trying all the other great ramen shops in New York!


Positives

> You can also choose to order from their lunch special - for an additional $4-5 you can try one of their buns or rice balls. Each of them are cooked incredibly well and are an excellent lighter complement to the ramen.
> Surprisingly not too busy - we had a party of 5 at around 12:30pm on a Saturday and we were seated immediately.
> The interior environment is modern, sleek, and comfortable.


Dishes Tasted

  • ★★★★ Spicy Tan Tan Ramen -- Housemade noodles, tokyo tonkotsu broth, roasted pork, egg, scallion, menma, crushed nuts, miso, chili pepper. Perfect level of spiciness for me. The broth is intensely savory and flavorful, and the pork is tender. The crushed nuts add an excellent textural component.
  • ★★★☆ Unagi + Gari + Sansyo Tokyo Rice Ball -- Eel, pickled ginger, sansyo pepper, seaweed. Nice flavor - the small specks of ginger mixed in with the eel really elevate the dish and balance everything out.
  • ★★★★ Classic Tonkotsu Ramen -- This ramen was pretty different from other ramen. The broth was relatively salty, fatty, and intensely savory. The noodles were relatively thick and had a perfect resistance to them. The pork was sliced thinly into large, flat pieces - it could have maybe been a bit more tender but I like the flavor and the cut. All the other toppings are perfect. All these components make an incredible dish!
  • ★★★★ Shrimp Tempura Tokyo Rice Ball -- Shrimp, chive, tempura sauce, and seaweed. Incredibly delicious. The shrimp tempura was really well-fried but felt light. The rice was fluffy and the right temperature/texture. The seaweed easily broke apart to the bite.
