General Notes
"California-inspired cuisine" at the Culinary Institute of America Copia campus. Supposedly a lot of the produce is sourced from the garden onsite. Unfortunately the food just didn't quite hit. There wasn't necessarily anything that was bad, per-se, but when the most delicious dish is the dessert, that's usually not a great sign. We came as a large group and had a fixed-prix menu (it was also free, since I attended a boot camp here).
Dishes Tasted
- ★★★☆ strawberry mousse -- this was quite tasty, the strawberry flavor was intense. The extra salt in the shortbread portion at the bottom was also a nice touch.
- ★★☆☆ black cod -- Black cod was cooked quite well but I'm not a fan of the fact that it comes in a watery soup instead of a proper sauce.
- ★★☆☆ steak -- served with a black garlic sauce. Steak was cooked quite well, but the black garlic sauce was a bit too strong for my taste
- ★★☆☆ mushroom steak -- the mushroom steak was obviously not my favorite but the accompaniments (some kind of curried grain?) was actually quite delicious
- ★☆☆☆ salad -- a bunch of greens mixed with a vinaigrette. Meh
- ★☆☆☆ the grove's ricotta -- garden cucumber, strawberry, shishito pepper, broken basil vinaigrette. The individual components are good but eating straight ricotta on its own is a bit insane
- ★☆☆☆ foccacia -- housemade sourdough rye focaccia, evoo, dried herbs.
