Despite being a food truck, this place is actually quite critically acclaimed (they have a proper restaurant location in Hayward). This was the last stop on our Redwood City taco tour. The taco was pretty solid, but it left some to be desired too. I found the meat itself to be relatively flavorless and underseasoned. I understand that the salsa is heavily seasoned and will add some much needed seasoning to the taco, but to lean so heavily on the salsa creates an imbalance in the dish. The salsa overpowers the rest of the taco. In a well-balanced dish, everything needs to be seasoned to the right degree.
> Their meats have a pretty substantial amount of fat -- for example the suadero comes with many chunks of pure fat. I find that this adds a lovely savoriness and juiciness to the taco, which I enjoy quite a lot.
> Overall, the meat is heavily underseasoned. Relying on the salsa to carry all the seasoning is simply not a very good idea.
