General Notes
La Gallinita is a butcher shop which also doubles as a taqueria. The cabeza in particular is INCREDIBLE and I will definitely be coming back in the future to get it. I also really liked the texture of the tortillas -- soft and with good structural integrity, while also lightly crispy.
