Yakisoba

A classic, almost fast food esque Japanese dish. I used to make this a lot more when I first started cooking (it's really simple and easy to make!), but I rarely make it nowadays, in favor of other dishes like my stir-fried rice cakes. Regardless, it's a simple, quick, and hearty meal that you can take in numerous directions.

Ingredients

> yakisoba (I used Nama yakisoba, which comes with the spice package)
> pork belly
> cabbage
> oil, water, spice mix


Instructions

1. Prep: cut cabbage into small to moderate pieces. Thinly slice pork belly and coat with potato flour.
2. Blanch the cabbage (cut into small to moderate pieces) for a minute or two.
3. In a wok over high heat, stir-fry pork belly until cooked. Add back the cabbage and stir-fry for another minute or so. Set aside.
4. In the same wok, stir-fry the yakisoba with a couple tablespoons of oil and a couple tablespoons of water. Continue for a few minutes.
5. Add back the pork belly and cabbage. Add the spice mix and combine thoroughly. Serve and enjoy!


Notes/Tips:

> I made this with pork belly and cabbage, mostly because those are the ingredients I always have on hand. Realistically, you can make this with more or less whatever ingredients you wish. For the vegetables, good options include cabbage, onion, carrot, green onion, etc. You can also use other cuts of pork, other meats, and even seafood.
> Unless you add a ton of other ingredients, I find the Nama yakisoba spice package to be a bit too much for one serving of yakisoba. I'd add around 2/3 to 3/4 pack of the spice package for each serving of yakisoba.
> Although it may be tempting to just put everything together at once, be patient. The end result will turn out much better if you cook the different ingredients separately. Particularly the vegetables, which if raw can lead to a very unpleasant taste.
