One of the first items I tried at SPRO was their ube cookies -- toasted coconut, ube, rolled oats. It was quite possibly one of the best cookies I've ever had, and I consistently order one every time I go there now. I sought to recreate it at home, and I was pretty pleased with how they turned out, even though I definitely messed a few things up (particularly during my first batch). The flavor combination of ube and coconut is classic, and the texture of the coconut and oatmeal in the cookie is wonderful.

> butter (2 sticks, room temperature)
> granulated sugar (120g)
> egg (1)
> ube extract (1 tsp)
> AP flour (192g)
> baking powder (1 tsp)
> baking soda (1/4 tsp)
> salt (1/4 tsp)
> sweetened coconut flakes (30g)
> quick-cook oatmeal (30g)
1. In a large mixing bowl or a stand mixer, cream butter and sugar until fluffy and pale.
2. Add the egg and ube extract, and continue to beat until fully incorporated and fluffy again.
3. In a separate bowl, combine the dry ingredients (AP flour, baking powder, baking soda, salt, sweetened coconut flakes), making sure to sift the AP flour to reduce the number of clumps.
4. Add half of the dry ingredients to the wet ingredients, and slowly mix on the lowest speed setting. Continue to gradually add the dry ingredients, and mix until just combined (do not overmix!)
5. Let chill in the fridge for at least 1 hour.
6. Portion 2-tbsp spheres of dough onto a parchment paper lined baking sheet. Bake for 12-15m in a 350F oven, depending on how chilled your dough is (12m for room temperature, 15m for fridge temperature)
7. Let cool for a few minutes before removing it. Enjoy!
> Many recipes will suggest letting the dough rest for an hour (or up to overnight), in order to allow the flavors to develop. They'll also suggest that you bring your ingredients to room temperature before using them -- I'd suggest following them! It does in fact make a difference. Especially for the butter -- it'll be impossible to cream without bringing it to room temperature.
> Feel free to adjust the amount of coconut flakes and oatmeal to your heart's desire; just make sure to adjust the amount of sugar accordingly.
