Space Princess

I had a drink at Urban Ritual called "Space Princess" recently. It's one of their new offerings: rosemary, honey, lavender, milk, topped with star fruit garnish. It was incredible, so well balanced, and tasted kind of like a melted honey lavender salt and straw ice cream. I sought to reproduce it at home and I'm pretty happy with the results!

Ingredients

> milk / milk alternative (1 cup)
> rosemary (1 small sprig)
> culinary lavender (1 tsp)
> honey (~2 tsp)


Instructions

1. In a small saucepan, add the milk, rosemary, and culinary lavender. Heat it up over medium heat until just below simmering, infusing the rosemary and lavender flavor. Stir occasionally.
2. Once it reaches just before a simmer, turn off the heat, add in the honey, and stir it into the drink.
3. Strain out the rosemary and lavender and serve. Enjoy!


Notes/Tips:

> Adjust the amount of honey to your taste and to the type of milk that you're using. I used oat milk, which has a bit more natural sweetness, so you may want to add a touch more for other types.
> Scale it up to however many people you're serving! These ingredient amounts should be about right for one person.
