Shrimp, Tomato Basil

Probably not my favorite shrimp recipe, but I love the bright flavors of this dish. Fairly easy to make, and I would certainly recommend giving this a try.

Ingredients

> Shrimp
> Cherry tomatoes
> Garlic
> Basil
> Lemon
> Chili flakes
> Salt, pepper, paprika, olive oil


Instructions

1. Prep: peel and devein shrimp. Season generously with salt, pepper, and paprika. Chop cherry tomatoes in half. Peel and chip a couple of cloves of garlic into slices.
2. Over a large saute pan, heat olive oil over high heat. Once oil becomes hot, add shrimp to the pan. Cook for about 1-2 minutes, constantly stirring, or until shrimp is mostly cooked through.
3. Remove shrimp from the pan and reserve. Reduce heat to medium. Add a touch more olive oil. Add chili flakes and garlic, and lightly fry for around a minute.
4. Add cherry tomatoes. Add some salt and pepper to season. Cook for a minute or two, stirring occasionally.
5. Add a small splash of white wine and some roughly chopped basil. Afterwards, add the shrimp back in. Squeeze a tiny bit of lemon juice and stir. Serve and enjoy!


Notes/Tips:

> Be fairly conservative with the amount of white wine that you add here. This dish doesn't really involve too much oil, so the wine can be overpowering and make the dish really watery if you add too much.
