Inspired by smelly lunchbox (https://smellylunchbox.com/chinese-cold-sesame-noodles/). Super simple dish -- the whole thing comes together in under 10 minutes. And incredibly delicious / satisfying / comforting, especially on a warm summer day.

> noodles (1 bunch)
> cucumber (thinly sliced into slivers)
> scallions (finely chopped)
> cilantro (finely chopped)
> sesame seeds
Sauce:
> sesame paste (1 tbsp)
> peanut butter (1 tbsp -- optionally substitute with more sesame paste)
> garlic (1 clove, minced)
> soy sauce (1 tbsp)
> black vinegar (1/2 tbsp)
> sugar (1/2 tbsp)
> chili oil (1/2 tbsp)
> sesame oil (1 tsp)
> hot water (2 tbsp)
1. Boil the noodles until fully cooked through. Drain immediately and thoroughly rinse with cold water until all the starch has washed away and the noodles are cool to the touch.
2. In the meantime, prepare the sauce by mixing all the sauce ingredients until it forms a viscous liquid.
3. In the serving bowl, place noodles, and top with sauce, followed by cucumber, scallions, cilantro, and sesame seeds. Enjoy!
> Adjust the ingredient amounts to your personal preference, especially the chili oil / peanut butter. You could also consider adding finely chopped peanuts if you wish.
