Possibly one of the simplest recipes in existence. Credit goes to my dad -- his grandma would frequently make this dish for him when he was younger. The name of the dish comes from the fact that she would literally use a large metal spoon over a fire to cook the egg. This dish is great when you want something a little more and fast. Simple and delicious.

egg, oil, salt


Instructions

1. Heat a very small saute pan over high heat until smoking hot. Add some oil, and heat until it's starting to smoke. Season the pan with salt.
2. Crack the egg into the pan and vigorously stir-fry until all liquid egg has solidified. Immediately serve and enjoy hot.


Notes/Tips:

> Season the pan instead of the egg -- the egg cooks so fast that you literally won't have time to season it.
> Make sure the pan and oil are both smoking hot (literally). The egg should cook in no more than 10-15 seconds. The high heat is essential for getting the best texture. Any longer and you're either overcooking it or the pan isn't hot enough.
