藕盒

This is essentially the same recipe as 茄盒 (http://www.brianxie.me/cookbook/eggplant-burger/), except using two slices of lotus root instead of eggplant "pita". I personally prefer lotus root over eggplant because it gives a nice crunchy textural contrast and the holes in the lotus root give the batter a more scraggly, crispier texture.

Ingredients

Same ingredients as 茄盒, except with about 1 lb of lotus root instead of eggplant, sliced into thin 1/2 cm slices.


Notes/Tips:

> Be careful when handling the lotus root "burger". Because the two slices are not connected together, it has much worse structural integrity than the eggplant "burger". Handle lightly.
