Another one of my standard vegetable dishes. Simple, hearty and delicious. The dish looks basic but you can go a long way with just green onion, oil, and soy sauce.

> romaine lettuce
> green onion
> oil, soy sauce
1. Prep: cut lettuce into manageable pieces. Roughly chop green onion
2. Blanch lettuce in a pot of boiling water until almost fully cooked. Drain and set aside.
3. In a wok, heat oil over high heat. Once hot, add green onion and stir-fry until just before it starts to take on any color. Add a bit of soy sauce, swirl around, and immediately add lettuce. Stir-fry for maybe 30-60 more seconds, then serve and enjoy.
> Be generous with the green onions. They bring a delightful flavor to this dish and are the key source of flavor. It is very hard to put too much green onion in this dish.
> "Fully cooked" means still crisp, but without the stringy, raw texture. Take care not to overcook the lettuce when blanching it.
