home-style tofu

Had this dish at a northeastern chinese restaurant recently and it super tasty so I wanted to recreate it at home. I haven't been able to find the exact kind of tofu, which is super soft, to the point of runny on the inside, and fried on the outside. But other types of tofu work as well. You could take soft tofu or egg tofu and fry it first. The flavors in this dish are excellent. Super simple and goes great with rice.

Total Time: 20 min

Ingredients

> fried soft tofu (~10 oz)
> red onion (1)
> bell pepper (1/2)
> garlic (~5 cloves)
> soy sauce (~1 tbsp)
> dark soy sauce (1 tsp)
> sugar (~1 tsp)
> oyster sauce (~1 tsp)
> water (~1/4 cup) + corn starch (~2 tsp)

Instructions

1. Prepare the ingredients: dice the red onion, bell pepper, and garlic cloves. Mix together all the other ingredients together to form the sauce mixture.
2. Stir-fry the red onion, bell pepper, and garlic together for several minutes. Add the soft tofu and stir-fry for another few minutes. Add the sauce mixture, stir-fry a few more times, then serve.

Notes/Tips:

> The fried soft tofu that I had can be hard to find. Supposedly it's not too hard to find at supermarkets but I haven't been successful at it.
> Be careful to add enough water to the sauce so that the corn starch doesn't coagulate at the bottom of the wok. And don't stir-fry for too long over high heat after adding the liquid. Add more water as needed.
