This is perhaps one of the most straightforward pasta dishes, especially if you buy pre-made gnocchi. Brown butter and sage is a classic pairing and the two work together so well, especially with the more substantial yet fluffy feel of the gnocchi. The flavors are subtle but incredibly delicious. You could definitely make your own gnocchi as well -- it's not as difficult as it seems.

> sage
> parmigiano reggiano
> salt, pepper
1. Boil the gnocchi in heavily salted water until the gnocchi begin to float to the top (or for however long the package directions are)
2. In the meantime, make the brown butter sauce by melting butter in a pan over medium to medium-high heat. Add sage leaves and let fry for about ~30 seconds.
3. Remove the gnocchi from the pot and add straight into the pan. Gently stir and let fry for about 30-60 seconds. Season with salt and pepper as necessary.
4. Serve onto a plate, and top with some grated parmigiano reggiano. Enjoy!
> Over medium to medium-high heat, the brown butter sauce probably cooks down in about 3-5 minutes. Swirl it around a bit to make sure that the sauce browns evenly.
> Sage is very strong fresh, but it mellows out and acquires a delightful texture when fried in the brown butter.
> For each serving of gnocchi, ~2 tbsp butter and 4-5 sage leaves is probably best.
