姜汁菠菜

Tangy, light, and refreshing side dish. Works great as a starter and complement to any meal, but especially heavier, saucy Chinese dishes. Simple and easy to make too.

Ingredients

> chinese spinach (1 large bag, ~12 oz)
> soy sauce (1 tsp)
> sugar (1 tsp)
> rice vinegar (1 tsp)
> sesame oil (1 tsp)
> Sichuan peppercorn oil (1/2 tsp)
> salt (1g)
> grated ginger (1g)
> sesame seeds


Instructions

1. Blanch the Chinese spinach in a pot of boiling water for ~30 seconds. Immediately cool in ice water, drain, and dry to the best of your ability.
2. Mix all the ingredients except sesame seeds (soy sauce, sugar, rice vinegar, sesame oil, peppercorn oil, salt, grated ginger), and then mix it with the spinach.
3. Place the spinach in the desired serving plate. Top with some sesame seeds. Serve and enjoy!


Notes/Tips:

> For this you'll definitely want to use Chinese spinach, not regular spinach. The taste isn't dramatically different but Chinese spinach is much larger and it'll have a slightly nicer texture.
> Be sparing with the amount of grated ginger that you add. With too much it can definitely overpower the dish.
