Last year I went to Serafina, an upscale Italian restaurant, and I ordered their calamari ripieni (stuffed squid). It was my favorite dish there, and what stood out to me was the potato leek puree -- the stuffed calamari itself was solid but the potato leek sauce really took it to a new level. This is my recreation of that. I made Provencal stuffed squid, which is similar in nature to Italian flavors; could also switch the stuffing with more olives and other Italian ingredients. It turned out great, and I'm happy with how it turned out. It's a weird combination at first glance, but they work together remarkably well!
