As a child I really didn't like mushrooms, and this was the one recipe my mom would prepare in which I found mushrooms tolerable (I enjoy mushrooms much more nowadays). It's incredibly simple (especially if you have a toaster oven) and delicious. And a versatile recipe that works across a variety of things -- scallops, asparagus, to name a few.
Active Time: 15 min
Total Time: 20 min
> button mushrooms (12)
> bacon slices (6)
1. Thoroughly wash, dry, and lightly season the button mushrooms with salt/pepper.
2. Cut each slice of bacon in half widthwise.
3. Wrap each button mushroom with a piece of bacon. Hold everything in place by inserting a toothpick through the middle. Arrange in a baking sheet lined with aluminum foil.
4. Bake for 15-20 minutes at 375F (the exact temperature does not really matter), flipping once in the middle.
5. Serve and enjoy!
> This general technique works for a variety of other ingredients, although button mushrooms are definitely my favorite. You might have seen a similar recipe with asparagus on Tasty. Scallops also go great with this.
> Consider broiling the mushrooms. This dish is even better when grilled to get some smoky / grilled flavor; the broiler replicates that somewhat.
> The exact temperature and baking time does not matter -- you can't really overcook mushrooms, so just cook as long as you need to achieve the desired texture on the bacon.
