Avocado Toast

Avocado toast is simple and delicious, but the difference between a mediocre avocado toast and an amazing one is tremendous. The ingredients really shine through here, so it's important to invest in quality ingredients.

Ingredients

> Bread, freshly baked (I prefer sourdough or whole wheat, in thick slices)
> Olive oil (good quality)
> Avocados
> Topping salt (I use fleur de sel)


Instructions

For a basic and delicious avocado toast, first lightly toast some bread. I prefer to slice the avocado and fan it out, which I think gives a better texture and appearance. Arrange it on the bread, top with salt and a light drizzle of olive oil. I’ll typically also grind a bit of black pepper on top.
Beyond the basic avocado toast, some of my favorite variants include:
> Pesto! The acidity and fresh tang of the pesto complement the richness of the avocado perfectly. I'll decrease the amount of olive oil and salt used, and smear some pesto onto the toasted bread before arranging the avocado and adding salt. This is the version I made in the picture.
> Tomato, basil, and balsamic reduction. Again, the acidity and freshness of this combination really complement the avocado. I thinly slice some cherry tomatoes, top with some chopped basil and a little bit of balsamic reduction.
> Fried egg.
